What to do with BEETS and FENNEL?

Beet cake does sound pretty tasty! I ended up roasting them and eating them with olive oil, salt and pepper. They were very tasty! Oh and I sauteed the greens, also with olive oil, salt and pepper.

Tonight I am making fettucine with fennel pesto. I found the recipe in a low fat vegetarian cook book that I have. I don't really know what to expect but it sounds pretty tasty!
