Thanks everyone, I knew there was a difference but I didn't know of all these specialties they're good for. i will try making deviled eggs with them today and not telling the rest of my family they were Ophie's lol. Thank you all.
I haven' gotten any eggs yet, but since my ducks are for PETS ONLY I plan on cooking them hard-boiled and giving them right back to the ducks.

We LOVE them and never buy chicken eggs from the store. We use our duck eggs for everything fatrom baking to breakfast. They're not greasy, but people say eating a goose is greasy. Maybe that's what your Uncle was thinking of.

Do you have The Book of Geese? in the back of the book they have quite a few recipes for using goose eggs and cooking goose. I have never eaten goose or duck. even though I have them both. I do like their eggs though.Oh I agree so much about the goose eggs. Wow. Store eggs are to home chicken eggs are to home duck eggs are to goose eggs. I've said before though - the trick is finding a recipe divisible by three since one goose egg is 3 chicken/duck ones. I always make sure to steal some and scramble and freeze for winter baking.
If anyone is interested I will relate my goose-eating experience. While I'm pretty sure (based on the serious lobes of fat and stuff on their chest and bellies) they are fatty, I suspect the "greasiness" comes from not actually preparing them right.
Score, render, etc. I think I can get them to baste themselves nicely and still drip and render fat that I will keep for confit and frying potatoes and other stuff. This is my hope. I could be totally delusional on this having never done it.
I'll know for sure in late September.
