What to do with eggs

I sell my excess eggs, keeping a couple dozen for eating and baking and special friends give away.... I also take eggs to my dentist and doctor.

I make "breakfast omlets or scrambled" at least once a week for dinner, whip up an occasional quiche (using 6-7 eggs) and baking. The quiche freezes well and the zucchini bread does too.

Might be wrong but I think we ought to throw them at the nieghbors who don't like our chickens are who has dogs running lose

I'm Ukranian on my dad's side and when we were younger, we always made these eggs. The trick to blowing them out is that first they are decorated and covered with wax. When you are finished decorating them, you carefully poke a hole in the big end, and then break up the yolk with the needle. Then poke a hole in the little end and CAREFULLY blow very gently. The fact that the yolk is already broken helps it run out without breaking off a big chunk of the shell. Also, having the egg covered with wax helps give it a little more protection.
