What type of insulation should I use?

I'm in the process of building my coop and concerned about the hot Texas summers. I've considered installing insulation sheathing on the frame and then covering the exterior with T-111 siding, I'm wondering if the chickens will peck at the exposed insulation inside the coop. Should I install the insulation and leave the interior side exposed in the coop or should I use something to cover it up? Any help is greatly appreciated.
 
Hello we are in PA so we wanted to insulate so we decided on fiberglass paperback R13 becuase of cost. I wanted to use the insulated foam board but the cost was like 25.00 a sheet very expensive considering we can do 11 studs for the same cost using fiberglass and becuase both needed to be covered with something we decided to use underlayment plywood to cover.
 
I've heard the most important place to insulate is the ceiling. You could buy the rigid foam (expensive) stuff for the ceiling and you wouldn't have to cover it. That's what I did and used cheaper styrofoam in the walls covered with shower board.
