lack of calcium can be a trigger.

Generally though they break an egg by accident or a soft shelled egg is laid and it breaks. Chickens love the taste of egg and once they get the taste of it they will very easily turn into egg eaters.

Do not feed eggshells to your birds that you do not crush up before giving them to them. They CAN associate those shells with the ones in the nest boxes and become egg eaters.
