What would happen if you bred a cross breed with another cross breed?

A friend of mine crossed his dog with a chicken and got a Cockerel Spaniel.

My OCD has me with purebred flocks, neatly organized birds into their respective pens. Then my right brain takes over from the left side and chaos ensues, insert the Purple coop (aka the Eggplant) where I have an assortment of birds, some pure and some hybrids, ruled by a hybrid rooster. It's my favorite pen to hatch from since I don't know and can't predict what each egg will yield. It's like I'm living on the edge, a mad scientist of chicken creation, at odds with the need for order and purity.

So in the Eggplant I have blue layers, green layers, brown layers and olive. The rooster carries either mint green or Olive, I've been questioning his parentage... the more I hatch from him the more I can narrow that down. I'm getting neat feathers and the eggs will be colored. It's my fun coop!

In the barn flocks I'm much more serious about it. The barn has a steady predictability and refinement. The Eggplant... it's evolving.
