What would the genetics for my flock be?

So, my rooster, Mitchell just passed away and he has a single copy of barring. I have a couple questions about the colorations of the chicks that would be his potentially. I have a sapphire gem which is a mix of a barred rock hen and a blue andalusian rooster. So the offspring of MistyxMitchell would have 2 copies of barring correct? But if Romeo my welsummer was to father some of the eggs they would also have barring but what would the coloration be? Since I'm gonna guess that MxM would be blue barred. But the part that now gets confusing is for the EE eggs. I have one other rooster.. my Easter Egger, Silvia. He kind of has some sort of laced pattern with orange and lavender but how would I tell Silvia apart from Romeo if they fathered those eggs? The EE hens I have also have fluffy cheeks and so does my roo. The particular hen that will mother the eggs (in photo below next to Mitchell)

You're incorrect about the barring. Your sapphire gem hen doesn't have the barring gene so crossed with the welsummer none of the offspring will be barred.
Your other rooster has one gene for barring so his offspring has a 50% chance of getting a barring gene and being barred and a 50% chance of not getting the gene and not be barred.

Oh okay, I thought that she would still carry the gene due to her having barred rock in her.. so, is there any way to tell other than barring which will be Mitchell's kids? I know Mitchell had white legs vs. Yellow like my wellie too so with some I may be able to tell that way..
 
No barring is sex linked and if they have the gene it shows.
SGs are bred to be sex linked using the barring gene. The mother passes barring to her son's but not her daughter's so SG hens do not carry barring.
The rest is more than id want to sit down and unravel.
Nothing except the welsummer has known genes. Youre talking about mixing mixes with unknown genes so it's a crap shoot.
White skin is dominate to yellow so your rooster with white legs may be carrying yellow or he may not. The SG are really unknown what the parents actually are. When you say blue Andalusian I know thats not quite correct. They would os been splash instead of blue and the original company that created them said it was an adalusian type of bird so what does that mean? IDK.
An andulusian to a barred rock would result in a white shank offspring. SGs have yellow shanks.
In theory you welsummer Xs SG would result in all yellow shanked offspring.
Your other rooster May produce all white shanked offspring or some white and some yellow.
Once you throw in EEs everything goes out the window.

Ah okay. I got my Sapphires from townline (they call theirs blue rocks). Their legs are just like a BA so I would think that the hatchery was correct. EEs are so hard to determine for the kids that's how I got my current EE. I crossed 2 of my EEs and got him. He looks quite a bit different than his daddy as his dad was silver duckwing based but his son has a lot of lavender, gold, and red on him. His momma was messily buff laced.. rehomed his momma and daddy together so I have just the son. I'm really hoping I get a son at least from Mitchell as I want those amazing rooster qualities from him to stick with my flock.
