Most of my recipes are super easy, just a little different than what people are used to. There are recipes from the good old days when you had to make stuff out of what you had. Our favorites are corn cob jelly, dandelion jelly and wild violet jelly. I have tons of the usuals because I have apple, peach, cherry, fig and plum trees along with mulberry, blackberry, rED raspberry, strawberries and blueberries.

Your jellies are YUMMY!!

Oh I think the unusual blends would be nice to try to make. Dandelion sounds interesting and I would imagine something like lavender would be. I love the flavor of ginger.

Shannondee: if you have a dandelion jam or lavender jam recipe I would love to get the recipes too :)

sorry, have been 'eavesdropping' :)

Sure, it's easy. just a few ingredients. The hard part is getting the dandelions ready. You have to remove the yellow parts without getting any of the greens in it. That will make it bitter. My grandmother taught me a little trick of grabbing the flower head with my thumb and index finger, pinching it and then rolling it between the 2 fingers and that will remove the heads without the greens. Last year I was able to get a bunch and removed the heads and stored them in gallon ziploc bags in the freezer for dandelion bread and dandelion wine. You have to make sure that the dandelions that you get come from an area that hasn't been treated with anything like fertilizer, weed killer or any chemicals. The recipe is the same weather you use dandelions, wild violets, pansies, rose petals or any other edible flower. So you can customize it. I will dig out the recipe for the exact measurements when I get back home this evening.

Oh my gosh, thank you shannondee! We have a bunch of dandelions on out property (don't use chemicals, so they should work). Really appreciate it! :)

Oh, how are your duck eggs developing?

I grow my own ginger. I ususally candy it for baking. Then I use the leftover syrup from candying it to flavor and sweeten my applesauce when I make it. It's also great for homemade ginger ale. We eat candied ginger for upset stomachs and my sister in law uses it for morning sickness.

so far so good. I set 12 8 days ago and candled them at 5 days. I already had a stinker that was completely black at only 5 days so I think I was given an old egg. 3 look clear but the rest are developing nicely. I also set 8 more shipped and 4 more of mine yesterday. All the shipped ones had the detached air cell but I am hopeful after letting them settle.
