Iris do extremely well in the south. My mom is south of New Orleans in Houma and she has tons of them and yes you can eat them or you could potentially save and reuse them. You just have to keep them in an airtight container with no moisture out of sun. I put a little bit of raw rice in a plastic container and keep them in a cabinet.
Just confirming that Iris do well in the south and you can eat and/or keep and reuse the fondant? I had to reread this a couple times trying to figure out how and why you'd eat iris but I know those cajun are crazy so anything is possible!!
