Instead of rolling up the enchiladas my wife uses the same meat and sauce from the can and layers a tortilla on a lay of meat until the backing dish she is using is full enough to bake until done. I do like mine smothered like that. She has no special recipe.

Put ‘em in a breakfast burrito, serve smothered in chili and cheese, as a side with a burger or hot dogs, make “nachos” with ‘em
