Whatcha Making for Supper?

Curried red lentils. It’s vegan, not my goal, but easily not. I use the below recipe pretty closely, but cut the cumin and coriander to 1 tsp each. I don’t add any salt and use vegetable Better Than Bouillon. Hubs will add a bit of salt to his. You could add carrots, I think that might be a tasty addition. I serve over rice or riced cauliflower. You can use coconut milk or coconut cream but get unsweetened. I used coconut milk but I think the cream would be fantastic. Also, I used coconut oil to cook the aromatics.
