This is truly the best Cauliflower Cheddar Soup recipe I've tried:

1 medium head Cauliflower, broken in florets
1 medium onion chopped
14 1/2 oz chicken broth
1 chicken bouillon cube
2 TB butter
2 TB AP Flour
3 cups milk
2 cups (8 oz) shredded cheddar cheese
1 TB dried parsley flakes
1 tsp salt
1/4 tsp nutmeg
1/8 tsp each cayenne, curry powder and white pepper

In small dutch oven, combine the cauliflower, onion, broth and bouillon. Cover and cook over medium heat until the vegetables are tender. Meanwhile, in a medium saucepan melt butter; stir in flour until smooth. Gradually add milk. Cook and stir until bubbly. Cook and stir for 2-3 min longer or until thickened. Reduce heat; add cheese and seasonings. Pour into cauliflower mixture. Simmer slowly for 30 min. (Do not boil)

Note: It sounds odd, but don't leave out the curry powder. It adds a subtle flavor, and gives this soup a touch of umami.
 
Yes I cooked the meat and a few of the peppers separately to let them absorb more of the smoke. I broke up the meatball and added it to the pot once it came up to temp
So that's a lump of ground beef? I have one of these Weber baskets that I've used in the past to smoke beef for making chili.

I think I like your method better... the drippings go into the chili pot.
