Whatcha Making for Supper?

Would you share the recipe for the Linguini with Vodka sauce?

The measurements are approximate, I usually just eyeball and taste and adjust. Lol

Cook linguini in a large pot of water.
Drain linguini, but save some of the water.
Sautee 1 shallot or 1 onion diced, and one clove minced garlic in some oil.
Add a jar of tomato paste and stir together for a few minutes.
Add 3 tbsp vodka and stir together for a few minutes.
Stir in 1/2-1 cup reserved pasta water. Let the pot simmer for a few minutes. Add salt and pepper to your liking.
Slowly stir in 1 cup cream and bring to a simmer.
Stir in 1/4 fresh grated Parmesan and 2 tbsp butter until sauce is smooth and slightly thickened.
Add cooked pasta and toss.
Top with more Parmesan if desired!
 
Lemon pepper trout with mashed potatoes and coleslaw for me - turkey with mashed potatoes and coleslaw for the Princess. Ordered 3 cheese squash casserole and got sweet potato casserole instead. Did we complain ? No. Why? Cracker Barrel was grossly short of staff, and our waiter was stretched beyond his limits and trying his best. At 'cash out' I complained - a first for me. Indicated that our waiter tried his best but that they needed more staff. It's a real problem around here. I can only imagine the nightmare that Mother's Day dining will be.
 
Wife had some kind of computer software change at work and had to go in early and stay late. They fed them and was gonna throw away what was left. It was Mexican foods like fajitas and stuff. She made an absolutely delicious Mexican casserole. Bottom layered with tortilla, then all the sautéed grilled peppers, then chicken, and all the other stuff. Then a few types of cheeses. And lettuce and Pico for after bake. Man what wasteful folks. Guess they didn't grow up without. Not me, bring it home!

Mother's Day...the absolute worst day to work in a restaurant.

The first year we were open at the golf course restaurant, the Sunday dinner crew consisted of just me doing both cooking & serving because it was normally slow and easy to handle. Then Mother's Day hit and we were packed to capacity with a line waiting for a table. My only recruits were DH and a maintenance guy...we got it done but swore never again :lol:
