@shabby chic-hens would be great with about any meat ?
any kind of sausage is good. you might need to add more oil if it isn't pig sausage. if you are talking other meat besides sausage, then you may need to add more spices.
now that I'm thinking about it, this recipe would be wonderful with bacon instead of sausage...
need to give that tip to mom...

When do you add the seasonings?

Is it okay to use Granny Smith apples?
1) it just adds a cinnamony underflavor. it doesn't fight with strong sausages. I've used sweet italian, spicy italian, maple breakfast sausage, and mom told me that she has indeed used bacon before.
2) I add the seasonings in when I add the potatoes
3) granny's are fine. if it's too sour for you, one can add maple syrup.
