Whatcha Making for Supper?

Tonight it will be ham, scalloped potatoes, green salad and possibly roasted butternut squash. I say possibly because I just don’t enjoy cutting up and peeling that hard raw squash. Usually I just poke it all over with a fork and microwave it whole until tender enough to cut in half, scoop flesh into casserole dish, top with butter and brown sugar and bake till it’s lightly browned on top and all the squash is cooked. Hmm. I won’t be roasting, I’m going to throw it in the nuker now. :gig
