Whatcha Making for Supper?

Broccoli and cheese makes a delicious quiche, those are easy to make. You can add all sorts of veggies to a quiche. (Do you eat eggs? I should have asked that first.)
I eat eggs mixed into recipes usually fine. I have a love hate relationship with eggs. I love them, but I sometimes get queasy thinking about where they come from. I usually end up craving them, so than I pretend I don't know what they are, and I bury them in cheese. :lol:

I really need to.learn to.make quiche. I would probably be the only one eating it though.....

I chose leftover beef pot pie here.

I have zero idea what I want to make tomorrow.
That's why I cook big pots of stuff. I only have to think about supper a few times a week. :)

If you want, I can share my recipe for quiche. Maybe you could make it in small tins so it's individual size servings. It's really easy and a nice way to use up extra eggs and bits of left overs.

This is the recipe I use:

6 eggs, beaten
1 1/2 cups heavy cream (1/2 & 1/2 works too)
salt & pepper
2 cups chopped spinach (if using frozen, squeeze all the moisture out)
1 pound cooked bacon or sausage or cubed ham
1 1/2 cups shredded Swiss cheese (or a mixture of cheeses)
1 pie crust, fitted into a 9" pie pan

Pre-heat oven to 375*.
Combine the eggs, cream, salt & pepper. Layer the spinach, meat and cheese in the bottom of the pie crust, pour egg mixture on top.
Bake about 35-45 minutes or until egg mixture is set.

You can play around with the ingredients to make it what you like...broccoli is good, mushrooms, sautéed peppers, etc.

I usually make up 2 of these at a time. Bake them both and then freeze one for later. If you're going to freeze one, slice it into wedges first, that will make it easy to just pull out a single piece to warm up later.

Thanks! I will be heading to the store to get a few things and will add spinach and mushrooms to my short list.

It is an all veggie list so far lol.

I will be mixing duck and chicken eggs. While the chickens are taking a break the ducks are laying quite well.
