Homemade pot pies are even better! I have never tried a vegetarian one but it is possible to make a homemade one.
They are better but for a dinner for 1, this is much easier.

I eat eggs mixed into recipes usually fine. I have a love hate relationship with eggs. I love them, but I sometimes get queasy thinking about where they come from. I usually end up craving them, so than I pretend I don't know what they are, and I bury them in cheese.Broccoli and cheese makes a delicious quiche, those are easy to make. You can add all sorts of veggies to a quiche. (Do you eat eggs? I should have asked that first.)

If you want, I can share my recipe for quiche. Maybe you could make it in small tins so it's individual size servings. It's really easy and a nice way to use up extra eggs and bits of left overs.
That would be great! So many google results it is hard to trust them to be good.
This is the recipe I use:
6 eggs, beaten
1 1/2 cups heavy cream (1/2 & 1/2 works too)
salt & pepper
2 cups chopped spinach (if using frozen, squeeze all the moisture out)
1 pound cooked bacon or sausage or cubed ham
1 1/2 cups shredded Swiss cheese (or a mixture of cheeses)
1 pie crust, fitted into a 9" pie pan
Pre-heat oven to 375*.
Combine the eggs, cream, salt & pepper. Layer the spinach, meat and cheese in the bottom of the pie crust, pour egg mixture on top.
Bake about 35-45 minutes or until egg mixture is set.
You can play around with the ingredients to make it what you like...broccoli is good, mushrooms, sautéed peppers, etc.
I usually make up 2 of these at a time. Bake them both and then freeze one for later. If you're going to freeze one, slice it into wedges first, that will make it easy to just pull out a single piece to warm up later.
