Whatcha Making for Supper?

Baked pasta? Sounds intriguing. Care to share? :caf

It's just al dente cooked pasta, the leftover marinara sauce, a little Italian sausage, and a handful of Mozzarella cheese. I was using up leftovers and there was enough for 3 individual size baking dishes. Ate one the first night and froze the other 2. Tonight I'll find out how a frozen one turns out when baked. :fl

My kids call that "Cheater Lasagna!" We start with all of the ingredients you would normally layer into a good lasagna. any single-serving veggie leftovers and maybe a can of whatever veggie strikes our fancy at the moment. Then we toss them gently with sauce, multiple cheeses, spices and some al-dente pasta. Top it with fresh, grated cheese and some Romano/Parmesan and bake.
Make sure your pasta isn't fully cooked, or you'll end up with mush! We like Ricotta, but if you don't have it (or want to go "skinny") you can actually substitute cottage cheese. My Italian aunts would have me drawn and quartered over a grape vat for it, but hey, it works ... and my kids would actually eat it!
