Steamed chicken breast, red leaf lettuce, kale and carrot salad.

Tonights menu is:

Main Dish:
- Sour Cream Enchiladas
Side Dish:
- Mexican Rice
Dessert:
- Red Velvet Cake with Home Made Cream Cheese Icing
- Chocolate "Magic" Custard

I would highly recommend the custard! It is amazing! With one batter it cooks into 3 layers. The bottom is custard-like, the middle is gooey, and the top is like a brownie/cake.

Today is my husband's birthday, so the red velvet is his birthday cake! I put links to everything I am making for tonight if anyone would like to try the recipes!
