Whatcha Making for Supper?

5 hours slow cook, 30 on pressure, and falls apart. Now into the broiler and onto a plate
 
We just had it last week, but I am making eggplant parmesan again today. We are having some good friends over for lunch and they are vegetarian. It's an easy dish to make early in the day, so it just makes sense to me.

We'll have Tuscan stuffed mushrooms and a salad to go with it, and I made a fresh unbaked peach pie for dessert.
