Whatcha Making for Supper?

This morning I got a pack of chicken legs in the crockpot and slow cooked them all day. Then I shredded the meat off and pan fried it in a generic taco seasoning. (I kept the bones and skin to toss in the freezer to make stock later.) The meat became filling for quesadillas.

I wish we could get pink pineapple here. Not quite so acidic. I love pineapple but it doesn't take much to start burning my mouth.

Just stopping in for some ideas. I've got some ground beef thawing but not sure what to make for supper

Tonight I'm making red beans and rice with kielbasa. Simple but hearty. We're expecting our first snow tomorrow so I'm thinking soup for dinner tomorrow night.

I'd make a meatloaf. I love meatloaf. Haven't made it in a while. Perhaps I should take some hamburger out of the freezer...
