I’m doing fennel risotto.
It’s made in the oven, no messing around with adding a little stock at a time.
It’s easy peasy and allows me time to have that second (third ?) glass of rosé

I like trying new things. And sometimes DH whines about that!

I found a cure for that a couple of years ago, DH wined saying he didn’t want fish for diner.
So I didn’t say a word but I got up took his plate and scraped his diner into the bin. Then I sat down and continued eating my diner. I didn’t even look at him.

Tilapia with garlic butter sauce, roasted herbed potatoes, corn. And always a salad.

Rockfish here buy it fresh at Costco not soft or pasty.
Fresh beets are the veggie probably tator tots.

Must be a seafood kind on night. Fried flounder fillets, sauteed scallops, fried grated potato cakes, butternut squash and a salad.

90° is too hot to cook anything so... cold tri-tip roast, spinach and raspberries salad, three cheese bread.

You can make risotto in an instant pot as well, super easy and quick.

We had tacos. I could hear the complaining (even though DH wasn’t home) so threw some cube steak and potatoes in the crockpot for him. He was appreciative.
