Whatcha Making for Supper?

I'm not sure "making" is the word I'd use here, but I was sure as heck eating.

I finally got around to turning the other night's pot roast into soup last night. I added some water and some pearl barley and simmered it for 30 minutes, breaking up the meat and halving the mini potatoes and carrots as I went. I also added some frozen corn towards the end.

I was happy with the outcome. But it came darn close to being stew, lol. All I would have needed was a little thickening agent. Any time I make soup, which is about twice a year, I am always heavy with the solids and light with the liquids. Just enough broth left over to sop up with a piece of bread or two.
