It's going to be great!! Colby will work fine. I used my Dutch oven because I could take it directly from the stove to the oven. Worked well.Tonight I'm making that Turkey TetREEzini recipe @ValerieJ posted. Mostly. No olives and the addition of carrots. I'm making a half lasagna pan's worth.
Everything is messed in place and the pasta cooked. It's only six here. Too early to eat yet.
Almost forgot. The local store did not have a brick of Monterrey jack. The goofballs. So I'm using a brick (1/2c) of Colby jack, with includes Monterrey. It tastes pretty bland anyway, but the orange tint might be different
