Whatcha Making for Supper?

I'm thinking tacos.
I bought some hamburger earlier in the week and have barely used any. I'm getting tired of wrapping it up and freezing it, so will have a smash burger for lunch and tacos this evening.
 
No. "Podunk" washington. We have cheddar and we have cottage cheese but the two never meet.
Last night's leftovers are still in the fridge, with cheddar and cottage happily coexisting in the same dish. We make something my kids call "Mexican Lasagna." It's different every time we make it. It calls for pretty much. The "noodles" are alternating layers of corn and flour tortillas. Other layers vary according to whatever's in the fridge or pantry, pretty much anything you would put in a taco, burrito or enchilada.
Last night's creation had beans (whole and refried,) drained canned tomatoes, salsa, corn, a little bit of leftover tomato soup (it doesn't really need liquid, I just had a little left from lunch) and shredded cheeses - in this case, white cheddar and colby-jack. My Italian roots require inclusion of a creamy cheese or I can't call it "lasagna," so we substitute cottage cheese for ricotta and call it a "win." It usually is, too. This is the first time in ages that I've had leftovers ... but I made twice as much in anticipation of tomorrow's storm and a likely power outage.
