Whatcha Making for Supper?

Breakfast for dinner! Banana coconut baked oatmeal.

I had the same problem the last time I used those noodles. They were too al dente and got crisped on the edges.
When you use the no-boil noodles you have to double the amount of sauce. I figured that out from experience.

I had 2 jars of Prego sauce and 2 quarts of cottage cheese. Over a pound of cheese. If I had any more sauce I would have needed a larger baking dish
 
I was kicking around how to reheat everything and remembered the foil packet...
So everything went into a double layer foil packet and into the toaster oven. It came out perfect. Just a little softer chicken skin. 350 for 30 minutes.

This meal is going into my rotation.
