No, he got done in time. I made the au poivre steak and mushrooms and they were delicious. However, I will find a better way to crush the peppercorns next time.

The worst part.
I even bought a small mortar and pestle, but then I read marble wasn't the best. And they do tend to jump ship and go flying.

And my meat tenderizer doesn't have a good flat surface on it. But I still think putting them in a baggie and whacking them is the easiest way.

I tried a new way to cook the parsley potatoes that did not work all that well, but they still tasted good.

Do you double fry?

Air fryer. The secret is to soak them in cold water for about ten minutes, then pat them dry before lightly oiling & putting them in the air fryer. Soaking pulls out a lot of starch, leaving you with crispy outsides and tender insides. Dang, now I need fries!

PS - Use the starchy water for your house plants. It's a good soil booster!

EDIT to Add: No double-frying. Just once in the air fryer after a good soak.

I'm going to be attempting this later in the week.

We do this with both fish and chicken, but my kids' favorite is definitely homemade mozzarella sticks. We've even used string cheese, which works surprisingly well!
It's messy, but it's easy ... delicious and waaaaay cheaper than buying them "out!"

Would a peppermill set on "coarse" work? I use mine a lot.

Would a peppermill set on "coarse" work? I use mine a lot.

I have (at the time I bought it) a good peppermill, but the coarse is not coarse enough.

Now that I think about it, I should try running some peppercorns through my little coffee grinder set on coarse.

It's parameters must be set on acceptable coffee grinds.

I'm considering an herb grinder.

ETA: Actually it is a coffee grinder reserved for herbs. I think if I pulse it rather than grind it will work.
