What's for Breakfast?

It is similar in a way since it is has a high egg concentration, but it is just one huge pancake. I make it in a cast iron pan, but I have seen folks make it in a glass loaf pan, too. I use the recipe from joy of cooking, but I usually replace the corn starch with regular flour. We all like that texture better.

Now I want to make blintzes tomorrow. 😋I love this thread!
 
I used to make them regularly, but haven't made them in a while. We use flour also. LOL.
Now I want blintzes too. I used to fill mine with a recipe of cream cheese and cottage cheese. :drool
 
2 scrambled eggs in a tortilla and some leftover pork chop + coffee
