I brought home a skinned pig head yesterday. He's in the freezer, waiting for me. The Joy of Cooking says to "gird your loins for the fray" in their pig head roast recipe. I still have to figure out what that means before I jump in.

fried chicken gizzards
pickle wraps....a pickle slice coated in cream cheese and wrapped with turkey or ham slice
rocky mountain oysters
homemade lefsa with butter, cinnamon, and sugar on them
gotta have applesauce on my mac & cheese
fried liver & onions
fresh cooked lima beans with butter, salt, and pepper
a special type of summer sausage made at Schmidt's meat market...has blueberries, wild rice and honey in it
pickled beets
bananna bread made with chocolate chips in it


its wierd...I will absolutely gag/almost puke if I bite into anything with raw onions in it. I absolutely hate anything with carrots and/or cabbage in it.

greens (country fried cooken)
