The best bird to hatch depends on what you want from your flock. Eggs but not meat? Leghorns are one of several great choices. Meat and a few eggs? Try a Cornish x or maybe some turkeys.

The most exciting thing to hatch is whatever is in your incubators right now. So, for me, that's Pilgrim geese, Ancona ducks, and Bresse and Americauna chicks.

Generally speaking I like hatching mixed breed Graylag type geese. Because they're cute, they grow fast, and I can pass them on to other geese to be raised. Plus, I like the variety hatching mixed breeds offers.
 
Barnyard mixes are fun because of interesting feather color, and egg colors, like Forest Gump said "you never know what you are gunna get." But mostly you know.
