whats your thanksgiving menu

here is the pumpkin roll recipe that I make
1/4 cup powdered sugar (to sprinkle on towel)
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 large eggs
1 cup granulated sugar
2/3 cup Pumpkin

FILLING
1 pkg. (8 oz.) cream cheese, at room temperature
1 cup powdered sugar, sifted
1 cup pecans, chopped (optional)
6 tablespoons butter or margarine, softened
1 teaspoon vanilla extract
Powdered sugar (optional for decoration)


Directions:
FOR CAKE:
PREHEAT oven to 375° F. Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle a thin, cotton kitchen towel with powdered sugar.

COMBINE flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and granulated sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.

BAKE for 13 to 15 minutes or until top of cake springs back when touched. (If using a dark-colored pan, begin checking for doneness at 11 minutes.) Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.

FOR FILLING:
BEAT cream cheese, 1 cup powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake. Spread cream cheese mixture over cake sprinkle with pecan peices. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired.

COOKING TIP:
Be sure to put enough powdered sugar on the towel when rolling up the cake so it will not stick.

This is so funny. As i read all the menus I can guess the states you live in. Well the region anyway. Us southerners cook huge amounts of food. Well, I will be getting together at my Mothers who is 80 with 6 of my siblings. One can't come. There will be lots of neices and nephews too.
We will have
Turkey smoked
Chicken and Cornbread Dressing cooked with a big fat hen
Chicken and Dumplings
Ham
Turnips greens with fresh pork
Collard greens with smoked pork
Peas
Butterbeans
Sweet Potatoe casserole
Fried Cornbread to go with greens of course
Fresh Cranberry Sauce
Squash Casserole
Fresh Broccoli and Cauliflauer Casserole
Okra
Fresh Frozen Creamed Feild Corn
Vegatable tray with dip
Icebox Fruitcake
10 Layer Chocolate Cake
Lane Cake
Red Velvet Cake
Sweet Potatoe Pies
Pecan Pies
Sweet Ice tea and Coffee
Its gonna be good.
Glad I don't have to cook all of it.

- Turkeys! We're frying them this year, so we always make a ton and everyone has left overs.

- Corn bread, banana bread, pumpkin bread, and rolls.

- Candy apple pie.
- Cherry dump cake.
- Carrot cake (My great great g'ma's recipe, swoooon.)
- Ginger spice cupcakes from everyone's favorite preschool teacher to take home!

Ren, I believe Fried turkey is the best. We had our first last Christmas Fried up fresh with CAjun seasoning injected inside and Whoa, it was fantastic. I have my order in for another this year. My Nephew does the ham on a Rotissere on his grill and it is awesome too. We can never eat all the food. Way to much Food is right. I am so looking forward to cornbread dressing, Mmmmm Mmmmmm.

We fried up our turkey a few years ago and it was so good we decided to do it again this year! Since we already have the fryer going, we fry way more than we need with lots of different seasonings so everyone can pick and choose... then it's left overs and lots of doggie bags lol
 
We will have between 40 to 50 people at my mothers house. Thanks the Good Lord we have great weather that day cause some youngins have got to get in the yard. I think it will be close to 70 and the sun will be shining. We will be in the house on the 2 porches and her bathroom will get workout.
