When are the eggs coming!?

We wanted to start off with 3 chicks and the feed store lady talked my wife into getting 4 in case one didn't "make" it. Well, Ricky being a roo doesn't make it either.

Eggs are priority one and Ricky has other priorities. His crowing sounds very cool, but every time he lets loose his "good morning" song, I think that a close-by neighbor will be annoyed. I don't have enough eggs to treat all the neighbors and buy them off. It is ok for now, but I don't want to be THAT neighbor.

I think that Ricky may have a better life being a daddy somewhere else than being cooped up with our three hens. Maybe later, I can get some of Ricky's offspring to expand my flock. I am also thinking that Ricky shouldn't be mating with his sister, not good for the Cochin genetics.

My garlic omelet recipe:

In a bowl, tear one slice of bread into small pieces (3/4" x 3/4") or like 20 pieces, drizzle a little bit of melted butter and a little olive oil, little bit of salt and pepper, and a small clove of crushed commercial garlic or a large clove of homegrown or farmer's market garlic. Stir lightly and set a side.

Beat 2-3 eggs, then add eggs to bowl of bread stuff, then pour everything into a preheated skillet (butter or non-stick spray). Let omelet cook on one side, tilt pan occasionally to allow egg mixture to cook along the sides, then flip the omelet over and cook on the other side. Serve with tomato slices on top or salsa.

I didn't create this recipe, I got it from the book Garlic is Life by Chester Aaron. If you like garlic, you will like this.

I understand about Ricky. I would love to have a rooster, they are beautiful. But I don't want to be THAT neighbor either. We are very social with out neighbors and when I told them we were getting chickens they were a bit "concerned". I promised that all would be hens. We have an acre and a half but any crowing would surley be heard.

We love garlic. Especially my other half, and every Sunday we have a big breakfast. We will have to try your recipe. With three hungry boys + a grown boy, I am always looking for something filling.

I also seem to have this guilt that I have to supply people with my fresh eggs. Why is that? I am hoping to put a little sign under my mail box advertising fresh eggs when everyone starts laying. $2.00/dozen seems to be the going rate around here for fresh eggs.
