I made a cake tonight and cracked open a double yolker into the bowl with all the other ingredients and wasn't sure the answer to this question. I assume it counted as two, but wanted to ask you good folks.

A standard large egg, that you would purchase from the store, is 2oz.. When I cook, I either go by weight or I use up my small (standard large sized) eggs, That way I sell and use my X large eggs for breakfast.

I count a double yolker as two eggs. bantam eggs are half. Duck eggs just make life interesting! usually count them as two. I also always round up with my eggs, I like moister, richer products.
