Babbs, the Shih-Tzu's for some reason really take to animals and herding. Gizmo the one I have now will herd the birds when I let him in the pen with me, he's really easy with them and has never even nipped one of them. When I have baby chicks hatch I have to give him 2 or 3 to check out and he lets them cuddle up next to him and licks them all over. I also had Gizmo's grandpa who was Spanky. He was also really good with the birds. The first time I noticed him with the birds was really funny, I had ordered a batch of Barred Cochin bantams and had them in the spare bedroom in a box with heat lamp and Spanky came up missing and wouldn't come to me when I called him so I got to looking for him and went into the chicks room and he had gotten into the box with the chicks and he was lying in the corner of the box with chicks all over and around him.
Now as for the horse Gizmo loves my horse. I can set him up on Mr's back and he will set there and let me lead him around. The horse doesn't mind a bit. I think its funny sometimes with my big ole 1200lb horse standing nose to nose with my lil 13 lb pup. As for eating of poop, I have the same problem with the birds poop and (airmom) the cat litter box, and haven't been able to break him of it, just have to watch him really close and holler no when I see him headed for it..
