When do they go from being "chicks" to "pullets?"

Pullets are female chickens under one year of age. Hens are female chickens one year old or older. Cockerels are male chickens under one year of age; roosters are a year or older.

However, most folks consider pullets "hens" as soon as they are laying. And "roo" is easier to type than cockerel, so that gets used for even baby male chickens.
