When do you give up on eggs and throw them out of the incubator

i found that I have made a major mistake I have been using an infra-red fan/heater and a heating coil I was told it is sucking out all my humidity and the temps have gone as high as 111, I am afraid I have ruined all my eggs , what a stupid mistake. I am starting a new bator with all your awesome ideas; and hopefully I can figure it all out. I think the ziplock baggie is a wonderful idea and I will try it also and I haven't given up on my eggs, but I afraid it's to late. I want a working incubator so bad I tried to use what I had, now its time to admit defeat and start over. Thanks to everyone for your help.
 
I toss them after day 22. Seems to me like if they hatch very late they are not always healthy. I like them to be healthy and spunky...
 
A probe is attached to the themometer to insert in water or to put inside a container of water or to put inside water wiggler toy to tell you the humidity inside the egg. They are very helpful in monitoring the humidity, you can buy them at wal-mart @ 11 dollars.
