When do you suggest starting fall meaties (New England)

Well of the birds I have now, the cockrels are much bigger, so I was thinking I could do them right at 8 weeks instead of waiting 10 like I'm going to do this time so the hens can catch up. I don't know anything about the processing side of it, I send them out.
