When to change food types?

I have 3 different sizes (or ages) of chickens: laying, teenagers (so to speak), and baby. At what ages do you change to laying food? What does the laying feed consist of? I give my layers and teenagers both scratch and extra corn chops. What else do I need to do? My layers free range part of the day and my teenagers are in a coop and run for a another few more weeks.
