When to send to "freezer camp"?

I have 4 Turkeys that are going to be ready for Thanksgiving. 1 DBW 2 DBB and maybe a Bourbon Red. When is the right time to do this and I know that they can be frozen but are they as good as fresh? My DBW is close to 30 lbs and still has great legs!

Well, I've yet to see a turkey with four breasts so... is that another name for broad breasted?

If so, the time to send them to freezer camp is the time at which they will dress out to about the target weight you're looking for. Fresh turkey is better than frozen, but if you wait not only can they get much larger than you will want -- too big to fit in your oven, even -- you also risk losing them to illness and injury related to their growth, which them means no turkey for Thanksgiving at all, and frozen is better than none hands down.
 
They very well could be called double breasted in some places, I had just never heard that before and it brought to mind a turkey with four breasts. Which I'm sure, if they could figure out how to breed, they would!
