I know roosters start crowing at all different ages but when they start mating with the hens and actually fertilizing their eggs or does it vary like crowing? Thanks.

It varies, like the crowing. One thing I'm almost sure of though. The cockerels will be ready to mate at least a few weeks before the pullets are ready to accept it. It's utter chaos until everyone gets on the same page.
Ditto, experiencing that right now... my two boys are barely 5 weeks, and their sisters are NOT appreciating the testosterone!
