My chickens are currently 3.5weeks old. I have read that they mostly poop at night while they roost. When does this start? I feel like every time my kids take them out of the brooder I am constantly following behind them cleaning up their droppings.

They don't so much poop mostly at night rather than more at night. You can still expect plenty of "gifts" on your sidewalk during the day.

They never stop pooping.
Add wood chips to help with smell
Plenty of air flow in coop
Put poop board under their roost for easy removal.
Let them free range if you can to spread it out.
Use a portable coop or run and move it occasionally.
Or like most of us after a month you won't even notice it.

If you garden any at all, put it in a pile to compost for later use. I have taken fresh poo and added boiling water and made a chicken sh** tea (I like to call it) to water my transplants with to help run some of the salts out from chemical overfertilization.

I would believe they poop MORE at night.... and certainly their poops seem to be BIGGER at night.... but yeah, chickens poop. All. The. Time! Sorry about that!
