and if I can't find one in Canada, where in the states would I find one? We are about to do 26 birds, and have another 50 coming.

Any other useful tools I might need besides a good sharp knife? thanks!

DON'T buy a lung scraper. Get a tomato/strawberry huller. They are about $2, as opposed to $25 for the lung scraper. The sawtooth head is exactly the same. The only difference is the 11" shaft on the lung scraper, but you can easily reach into the bird with the huller. You can get them at any kitchen store or online.

....... or use a grapefruit spoon

its a spoon that has a serated tip that helps to cut the pulp away from the skin so you can eat the grapefruit in sections without completely making it into grape fruit juice

Sometimes all you need is a gloved finger. Some folks don't even need the glove.

I find that I can usually pry the lungs out by just sliding my (gloved) index finger between the organ & the spaces between the ribs. This way it usually comes out in one piece.

Where I like to use a scraper is lower on the back, where the kidneys and those wriggly white tubes are found. I will use a grapefruit spoon or the point of a knife to scrape that gunk out.
