Its been awhile since I've made cheese but I believe you can make ricotta out of whey. Let the whey sit over night or til the next day. Gently heat the whey. I add some vinegar to help the process. Strain and rinse in a fine mesh collander.
If you heat up fresh milk with the cream to 110 and add vinegar you get curds! My chickens love this! I do this when I have alot of extra milk. They go nuts for it.
