Which Breed Shall I Hatch?

I had three of them. It wasn't an individual chicken thing. All my chicken lover friend's wyandottes are the same. I'm guessing you just got lucky, your chicken sounds nice:love
I can imagine anyone or anything would run away from you regardless of the breed or thing. :gig

Maybe my chickens just like me. All of them come running anytime they see me. Except for a few cockerels.
 
I've never kept a cockerel. Is it advisable?

Is it advisable? For most people, no. Especially beginners, which I don’t think you are. I have had 9 cockerels, and I’ve had to butcher all but 3 of them, since they were aggressive. I just butchered my last two mean ones earlier. One of the three is a silkie cockerel, and silkies are known for being very sweet chickens. If you are going to keep a cockerel, it’s more of (in my experience) let it live for a few months, and determine if it’s aggressive or not. Unless you want it for breeding, I would not recommend getting/keeping one.

It is generally only advisable if you want to have a steady supply of fertile eggs, and if the area in which you live allows roosters. Cockerels/roosters crow, and each one needs a good number of hens.

Ok. So would 1 rooster to 20 hens be ok. Would that mean a high or low fertility rate?

Generally it’s 1 rooster for every 8-12 hens. It depends on the rooster. You might want to have 2 boys to have a higher fertility rate, as long as they don’t start over mating the hens.
