I watched a lot of JOP, and I still can't make a paintbrush do what his did

I use some of his brush techniques but I do not like the wet on wet technique. A lot of paint is wasted plus it wakes up to 4 months for a painting to dry.

Well, paint pouring isn't exactly frugal when it comes to materials waste, but it's also acrylics so it's fully cured in 2 weeks

Yes, acrylics dry very fast. I use oils so it takes forever to dry unless cut with a good amount of turp.
