Which Eggs?

I have been reading up on the incubating process, but I have not read the answer to this really basic question: how do I know what eggs to incubate? Do I just save all my eggs? Do I assume they are all fertile? Only one of my hens is laying right now and she is the only one my rooster likes. And he likes her a LOT, lol.
 
I would just save all your eggs. Keep them in a clean carton at room temp, but not below 55 degrees. Keep one end of the carton about 2 inches higher than the other, and turn it every 6 hours or so. Eggs will keep for 7-10 days... I wouldn't go past 8 personally.

Also google the difference between a fertile and infertile egg. The fertile egg will have a "bullseye" pattern.
