Which Heritage breeds?

Dark cornish have a very heavy, muscular build. Big breasts and thick legs, lots of dark meat, since they're very active. They are a great all around dual purpose too...good layers, I've had some GREAT setters too. the only downside in my experience is that some of them can be very skittish and flighty, and I've also had a couple of aggressive roosters. My mixed flock has a lot of dark cornish in them (my original breeding rooster was purebred, along with some of the hens, and one of my current roosters is half breed).

Really though, any of those old dual purpose heavy breeds can yield great meat birds, that's why they're called dual-purpose--rocks, sussex, dorking, brahma, etc... However, there are different strains within the different breeds, so to a degree it depends where you get them. It's worth considering other factors too, IMO, like coloring, temperament, and so on.

Partridge rocks would be a fine choice, I'm sure. I've never had a PR rooster, but I remember we had a couple of hens years ago, and they were pretty plump!
