which is better for roaster? Australorp/Brahma/Cochin/Java/Jersey Giant/Langshan/Maran

Hi everyone.
I lived in hot and humid region.
I'm still not sure which breed to choose for making good roaster.
I've found a comparison table in http://www.albc-usa.org/heritagechicken/chickencomparison.html as a reference.
I prefer large fowl, fast growth, lots of meat and high rate of lay.
I have shortlisted the following: Australorp/Brahma/Cochin/Java/Jersey Giant/Langshan/Maran.
May I know what's your opinion?

I voted for Black Giants, but optimally you are going to want to caponize your cockerels so you can grow them to full weight and still have a tender bird.

Just curious ( I have Jersey Giants) is that something people do at home? And is there info on caponizing your Rooster on the Education part of this site?
