Which is harder to get rid of?

Is it the same if the gender is changed? ie: Rooster-White Hen-Yellow

Since they won't be pure in that first generation will the colors get all crazy?

And yep, it would be nice to have hers to compare too or maybe even you could get some eggs or something from her if she would be willing to sell and give you a bit of a jumpstart.
