I am culling my dual purpose flock because of coryza and MG/MS and one chicken had these tiny white dots under her skin. They weren’t attached and seemed to be spread around her whole body. I stopped processing at that point and threw the body in the trash and cleaned everything.

Has anyone seen this? Any ideas on what it could be?

It is most likely either muscle worms (tapeworm larvae) or Mycobacterium avium (avian TB).
I looked at the pictures and descriptions online and it doesn’t seem like either condition has the free floating dots, they both look like they are part of the organs or muscles.

I’ve culled most of the rest of my flock and no other chicken has had anything like it. It doesn’t seem to be contagious, whatever it is.

You can try contacting your county extension office. They should be able to contact an expert, probably with your state land grant university, and get their opinion.
I agree with this. I know when I used to hunt the game wardens always put out every year to never eat any animal carcass that had white spots and to report it.
