Also, is it ok to let them out of their coop or will they lay and hide their eggs? I try to let them out to stretch their legs and play in the afternoon when I get home from work. Will they lay and hide their eggs?
My hens don't, as they were introduced early. I usually keep my hens in the coop at the point of lay, so I know who has started laying and then let everyone out.
 
Hens tend to lay eggs in the mornings, so folks often let them out in the afternoons after they've laid, for some free range time. It's impossible to say if a free range hen that's used to laying in a coop will continue to lay there, or decide under some bush is better. I've seen both ends here--birds that pick a nest and never, ever lay elsewhere, and my own hens that would move nests almost daily.
